We arrived from Italy in 1996 armed only with few funds, even less English and a great passion for food, to open our first restaurant in a small ex florist shop just around the corner from where we are now.
Since then we have operated many successful restaurants in Tauranga and Mt Maunganui, setting new trends and standards along the way. But one has always been very special to us.
In 2004 we found a neglected old building on The Strand and had a vision to transform it into a welcoming, happy space. Exposing the hidden beauty of the kauri framed, brick clad, ramshackle building reinvented it to become warm and charming….to become VOLARE.
However, always looking for new challenges, a few years later we left Volare in very capable hands to continue to deliver great food and great service until specified earthquake strengthening work forced closure for almost 2 years.
The Return to Volare
We couldn’t resist the allure of this beautiful place once again looking abandoned and in need of love.
Working closely with the landlord, this c1900 antique has been given a new lease of life. The original charm and character of aged bricks and timber has been enhanced by massive structural steel framing that will support this gracious building for at least another century.
Along with the modern structure, we are back again serving up the same traditional Italian passion for authentic cuisine with a contemporary, modern direction.
The Evolution of Traditions
We believe that to keep them alive, traditions must evolve. We always keep close to our heart the fundamentals of traditional Italian dishes but seek to adapt ideas and techniques for new styles, flavours and seasonal produce to deliver an outstanding dining experience each and every time.
